Indian Butter Chicken Recipe!

I have a new recipe for you! Although, hopefully you've all heard about this delicious under-taking of food.

Indian Butter Chicken

What you'll need:

- 2 boneless, skinless chicken breast
- 1 bottle of VH Indian Butter Chicken Sauce (or a brand of your preference, there is lots out there)
- 2 cups of white instant rice
- Add your favourite vegetables. Sometimes I like to add Spanish oninons, yellow, red, and green peppers. (these are not necessary)

Preparation:
- You will place the chicken in the pan, with some butter and your perferred seasoning (I like seasoning salt), and cook on medium heat for 10-20 minutes - until chicken is no longer pink.
- Once the chicken is cooked, all the way through, take it out of the pan and cut the chicken in small/medium size chunks, and place it back in the pan.
- Take your bottle of Indian Butter Chicken, and depending on your chicken add the entire bottle into the pan. Lower heat, simmer-level 2.
- On a separate burner, bring 2 cups of water to a boil, (add some salt), and then add the rice when it comes to a boil.
- Place pot cover the rice for directed time until all the water is gone.
- Let cool and serve.

2/3 servings

A day in the life of...

A figure since my blog is about a day in the life of, it should have more post about what I do in the run of a day.

Today is an unusual day. I'm on March Break from university.

So, I will tell you what I am doing and then what I should be doing.

 11:30 
Wake up
Usually on a Friday up at 10:45 

Today, I started my day sick. Violently sick. Flu from hell sick.

So, I grabbed some of this newly discovered soy beverage that I am in love with.


12:30 pm -
Usually, on my way to my only class of the day Developmental psychology. 
Made a cup of regular tea and started on homework I have been procrastinating on for awhile.

2:30 -
Usually I'm just getting out of class, going home for the day. 

I folded the last load of laundry I brought home. Lets just say I used a lot of my parents laundry soap.
Yep, at 20 years old I still wash my laundry at home. Broke gurl, over here!

4:30
Supper time
This is usually later especially when I am back in the city. I get occupied with other things. 


This time it was salmon. A rarity when my Dad cooks, but when he does it is amazing.


5:00 
Selfie time. As a blogger, I take pictures on a regular basis. Trying to cut down on the ones of myself. 

Usually I am not doing to much regularly. Procrastinating the work I have to do.


In affect, I've discovered just how boring my life is. Ha!

Keep things consistent!

Is anyone still out there?

I've been seriously neglecting this blog mostly because I have not had much to post about. I switched phones. Making it harder to transfer my photos. I've also been busy, deciding my life.

- Illness:
* I've been super sick lately. I was in the hospital for a few days. Boo. But, I am feeling quite a bit better now.

- School:
* Midterms have taken over my academic life - but hey, it's that's time of year. Currently, I am on March (I was fortunate enough not to have a strike this year) and when I return, I have three more.
* Getting into psychology was a blessing in disguise. Now, just to figure out what I want to do with psychology.
* Bio-psych is where I am leaning. (possible university transfer)

- Work:
* I am still working at the job I told you about in my earlier post. Not much hours.
* Looking for a second summer job. (hint, hint guys!)

- Life in general:
* Being on vacation is nice. I'm using some of my time to relax but also using it to catch up on some work, getting ahead on things I know I can get ahead on.
* Leonard and I are still very happy. March is our sixth month together. Thankfully he still puts up with my craziness.
* I am making a commitment to get involved in things I like.
* Looking at an all girls sorority, and getting back into dance.
* I am also making a commitment to the blog. Because I would like post a lot more. Keep things consistent.

Right about here, I said fuck, really loud.

I've been sitting on a tattoo idea for awhile. And today, on the anniversary of my aunts death. I got one!

 All done but the cleaning.

All things put aside, that tattoo is simply amazing and I love it. And it commemorates my struggle through life, and one of the most important people in my life. My aunt.

A very successful endeavor.

I turned twenty.

So, yesterday, I turned twenty. Yep, twenty years old.

I had so much happen yester, and I would describe it as one of the best days of my life.

I first started by getting myself some things I wanted.

A Neil Gaiman book, a couple of shirts, and a bottle of my favourite spray from Bath and BodyWorks.

The began the gifts from my friends, all of which were surprises.



 The lovely Emma got me two books. One from an author I've never read, but apparently, should have, John Green. The other is from an author who I've been reading for a bit, Neil Gaiman. Amazing books.


 My friend Vanessa got me this huge tea set. From my favourite tea place. Teavana. One of the great gifts I have ever received in my life.



 I found this adorable cat shirt. From my friend Carissa. It is adorable and makes me look fabulous. Another great gift!

I was completely overwhelmed with what took place on my birthday, especially this outstanding gifts. I was touched incredibly based on each of our financial situation.

After all that, I went out to dinner with my boyfriend, Leonard.


I eat free on my birthday!

We picked a nice place the was cost affordable. I'm on a budget, no matter if it is my birthday or not.


I had a great time! And Leonard and I were excited to be celebrating my special day together.

We started with the grilled your own bread station. Mm!


I've discovered that sun-dried tomato sauce is my new favorite bread spread.

Our main courses came shortly after we finished our bread.

Oh, yes, and we added liquor.

Dessert, of course.

And, finally the night ended, we went home to a cozy warm house and slept peacefully.

To tell you about my life. A day in!

You can imagine I've been busy. Or perhaps you can't. 

The university opposing to me has decided to strike meaning a large amount of students are just wandering the city, having some fun, while classes have been canceled. Either way, it's not my blogs purpose to tell you about the inner works of disagreeing faculty and administration.

My blogs purpose is, though, to tell you about my life. A day in. 

Aside from the protesters crowding my street, horns honking, starting at 7 a.m., the winter weather has been terrible. 



  The temperature has increased lately, hitting as high as plus 4 degrees Celsius. So most of this has melted away, after the by-product of two severe ice storms in the province. The melting of snow and ice has made for undesirable wet conditions. 

However; that did stop me. 

I completed my first km run on Wednesday after I was involved in a hit and run that injured my knee. 

It was fantastic run. Despite soaked sneakers. 

Exhausted, a sore knee, and burning lungs. But accomplished nonetheless!

Surprise Date Night!

Leonard and I don't do dates very often. Mostly because we're poor university students and it's wiser on our part to just stay in and watch movie and make snacks.

But, tonight was a different night. We went out!

We went to my favourite Chinese restaurant in the city.

Cute little lay out. After we sat and placed our order with a great waitress. We devoured some wonton soup.

They have probably my favourite wonton soup around. And yes, I was a little messy when I ate. But, if you admit you aren't messy when you eat soup, then you're a liar.

We order our main dish after that!

We both ordered the same combination plate. Because we're in love. (oh that was gross, haha)

Approval by Lenny! He thoroughly enjoyed his meal.

 As did I mine, as you can see from the lack of food on my plate!

The night was a complete surprise. We weren't planning on going out to eat, but, that was the best part of it all. And we had a great time. I love you, Leonard.
